Retention depends on how much storage is put in place and how many cameras are recording continuously. It's sized to what you actually need, from a few days on a small setup to several weeks, and discussed as part of scoping rather than fixed to one default.

Can access control and CCTV share the same entry point setup?

Yes. A camera covering the door and a biometric or card reader controlling it are normally planned together, so you get both a visual record and a logged entry event for the same point of access.
